As Charlie Danger says, depends on the programme you're working with. iTunes is dead easy to make an album in, which the adult can support in terms of titling the playlist. Then your student can simply listen through the tracks and choose those she likes and drag them to her album. Just a task of drag and drop. If she finds targeting the album a problem, then the adult can demonstrate for her, and then give her the chance to have a go again. The nice thing is that if she drags a song into the wrong album there's no problem, the original stays where it was anyway, and you can just click and delete the copy that's ended up in the wrong place. Works a treat with an iPod obviously, but it's also fine just to listen to via the computer (or share the album so that other iTunes users on the network can listen to the selection of songs).
