Hi David

The Say-It-Sam software by Possum is written for an iPAQ to transform it
into a voca. They can be incredibly powerful with a huge vocabulary, or more
simple, but in my experience only suitable for users who can cope with
working with a stylus (or fingertip) on a very small scale. But we have used
them very successfully with a couple of children and they are surprisingly
robust.
